a couple weeks ago i tried a new recipe:
cauliflower and chickpea stew with couscous (from
real simple). i omitted the spinach and added almonds at the end, and it was DELICIOUS. very easy to make, really good flavors, and a perfect cool-weather recipe. i try to eat lunches that are almost entirely vegetables (and then i can eat whatever i want for dinner without feeling guilty), and this worked perfectly. i then made another batch to bring to a potluck at school, and it was a huge hit. hooray! you should try it.
