yummmm

i made this for dinner last night: chicken enchiladas verdes, from real simple magazine.  except i obviously didn't make them with chicken.  i used black beans instead and only made a half recipe, and it was DELICIOUS.  you should FOR SURE try this recipe...i tend to use beans, corn, and flour tortillas only to make burritos or quesadillas (quicker recipes than this one), but this didn't take much time at all and was LOTS yummier.
